Chicken Bake
- 4 chicken thighs, with skin
- chicken seasoning, to taste (I use McCormicks)
- 4 hot Italian sausage links
- 1 large onion, cut into large chunks
- 1 large bell pepper, cut into large chunks
- 4 medium potatoes, peel and cut into large chunks
- 2 large carrots, peel and cut into large chunks (optional)
- 1 (14 1/2 ounce) can diced tomatoes
- olive oil
- sage, to taste
- oregano, to taste
- Sprinkle chicken thighs with chicken seasoning.
- In large skillet brown Italian sausage with a little olive oil.
- Add chicken and sear skin to brown.
- Drizzle olive oil into a 13 x 9 baking pan.
- Place chicken and sausage in pan.
- Throw onions, peppers, potatoes and tomatoes over and around the chicken and sausage.
- Drizzle with a little more olive oil.
- Sprinkle with desired amount of sage and oregano.
- Cover very tightly with foil.
- Bake @ 425 for 1 1/2 hours.
