Red Clam Sauce (Sugo Vogole Rosso)
- 3 cloves garlic
- 2 anchovies
- 1 cup chopped clams, drained
- 1 dash hot chili flakes
- 2 to 3 tbsp. capers
- 1 cup dry white wine
- 1 cup red sauce
- 1 bunch Italian parsley, finely chopped to yield 1/4 cup
- Salt
- In a saute pan, on a medium high heat, saute the garlic, chili flakes, capers, and anchovies for 2 minutes.
- Add in the clams and the wine and reduce the liquid by 3/4th.
- Add in the tomato sauce and cook for another 5 minutes then remove from the heat and add in the parsley, check the seasoning for salt.
