Lemon Squares

  1. Preheat oven to 325 degrees.
  2. Coat 15 1/2-by-10 1/2-inch jellyroll pan with vegetable oil spray.
  3. In food processor, combine 2 1/4 cups flour, 1/2 cup powdered sugar and butter.
  4. Pulse to combine ingredients until mixture resembles fine crumbs.
  5. This also can be done by hand using a pastry blender.
  6. Press mixture evenly onto bottom and up sides of prepared pan.
  7. Bake 15 minutes.
  8. Remove crust from oven and increase temperature to 350 degrees.
  9. In medium bowl, slightly beat the eggs and add lemon zest and juice.
  10. In separate bowl, combine granulated sugar, 6 tablespoons flour, and baking powder and then stir into egg mixture.
  11. Pour mixture over the baked crust and return to oven.
  12. Bake 25 to 30 minutes or until center springs back when touched.
  13. Let cool 15 minutes.
  14. Put additional powdered sugar in sieve and sprinkle over top of bars.
  15. Cut into squares when completely cool.
