Absorption Method Two

  1. Wash well in a few changes of water: 1 cup basmati or other long-grain rice
  2. Put into a heavy saucepan with: A pinch of salt, 2 cups water
  3. Set aside to soak for 30 minutes.
  4. When ready to cook, add: 1 tablespoon butter
  5. Bring to a boil and cook, uncovered, until the water is absorbed and the surface of the rice is covered with steam holes.
  6. Turn the heat to low and cover tightly.
  7. Cook for 7 minutes.
  8. Turn off the heat and let sit for 10 minutes.
  9. Stir gently to fluff and serve.
  10. Add 1/8 teaspoon saffron with the butter.
