Hearts Of Palm And Zucchini Salad Recipe
- 2 (16 ounce.) cans carrots, liquid removed (whole if possible)
- 2 sm. zucchini, thinly sliced, about 3 c.
- 1 (14 ounce.) can Hearts of Palm, sliced crosswise in 1/2 inch slices
- 1 1/3 c. vegetable oil
- 2 sm. cloves garlic, chopped
- 1/2 c. vinegar
- 2 tbsp. sugar
- 3/4 teaspoon salt
- 1 1/2 teaspoon dry mustard
- 1 (2 ounce.) pkg. crumbled blue cheese
- Freshly grnd pepper
- Bibb lettuce
- Place vegetables in a shallow dish.
- Combine oil, vinegar, and seasonings in a jar with tight fitting lid.
- Pour over vegetables.
- Marinate overnight.
- Drain.
- Serve on Bibb lettuce.
- Sprinkle with blue cheese and grnd pepper.
- Serves 8-10.
