Bean And Cheese Quesadillas Recipe

  1. In food processor fitted with metal blade, process beans, red onion, cilantro, parsley and salsa till smooth.
  2. Place half of tortillas on work surface and spread with bean mix.
  3. Top each with cheeses.
  4. Top each with tortilla.
  5. Heat about 2 tsp.
  6. vegetable oil in medium-large skillet, preferably non-stick, on medium-high heat.
  7. Add in one quesadilla.
  8. Cook till beans are heated and bottom tortilla is browned, about 3-4 min.
  9. Carefully turn to brown opposite side.
  10. Repeat with remaining quesadillas, adding more oil when necessary.
  11. Cut each quesadilla into 8 wedges and serve warm.
