Crawfish au Gratin

  1. Preheat oven to 450 degrees.
  2. In a sauce pan, melt butter over medium heat.
  3. Whisk in the flour and stir continuously for 1 minute.
  4. Whisk in milk, very slowly.
  5. Bring mixture to a boil, then reduce heat to medium-low and simmer for 5 minutes.
  6. Mixture should be thickened at this point.
  7. Remove from heat and stir in Cajun seasoning and 1/2 cup Parmesan cheese.
  8. Add crawfish; stir well.
  9. Grease a glass pie dish or pie tin, and pour mixture into it.
  10. Top with remaining cheese.
  11. Bake for 8 10 minutes, or until cheese begins to bubble.
