Pork and apple spiral with glazed carrots
- 1 pork tenderloin
- 4 tbsp apple sauce
- 2 carrots
- 6 green beans
- 25 grams butter
- 2 tbsp castor sugar
- 1 clove garlic
- 1 chicken oxo cube
- 1 pinch freshly chopped parsley
- trim the pork of all visible fat with a sharp knife.
- top and tail it.
- cut it lengthways to one side and spirally work your way to the middle to lay it flat
- crush the garlic and mix with the parsley and rub over one side of the pork.
- spoon apple sauce along the length.
- roll it and skewer it best u can.
- place on a baking tray and cover with tin foil
- *I used my roasted new potato recipe underneath the pork
- once cooked remove from the oven and cover to rest
- melt the butter in a pan and add the veg, sugar, oxo cube and water to just below the top of the carrots and stir
- once the veg is as you like, remove, leaving the juices in the pan to reduce.
- once thick and syrupy add the veg back in and turn off the heat
- remove skewers.
- thickly slice the pork and serve
- with the top and tail I seasoned, fried and chopped up into a wrap with salad and apple sauce.
