Pork and apple spiral with glazed carrots

  1. trim the pork of all visible fat with a sharp knife.
  2. top and tail it.
  3. cut it lengthways to one side and spirally work your way to the middle to lay it flat
  4. crush the garlic and mix with the parsley and rub over one side of the pork.
  5. spoon apple sauce along the length.
  6. roll it and skewer it best u can.
  7. place on a baking tray and cover with tin foil
  8. *I used my roasted new potato recipe underneath the pork
  9. once cooked remove from the oven and cover to rest
  10. melt the butter in a pan and add the veg, sugar, oxo cube and water to just below the top of the carrots and stir
  11. once the veg is as you like, remove, leaving the juices in the pan to reduce.
  12. once thick and syrupy add the veg back in and turn off the heat
  13. remove skewers.
  14. thickly slice the pork and serve
  15. with the top and tail I seasoned, fried and chopped up into a wrap with salad and apple sauce.
