Chicken Stuffed Tomatoes Recipe
- 1 whole chicken breast, boned, skinned and diced
- 1 tbsp. butter
- 4 lg., hard, ripe tomatoes
- 3/4 c. reg. wheat germ
- 1/3 c. minced green onion
- 1/3 c. minced green pepper
- 3/4 teaspoon curry pwdr
- 1/2 teaspoon thyme leaves, crushed
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Avocado wedges, ripe olives, lettuce
- Saute/fry chicken in butter till tender, about 5 min.
- Cut thin slices from top of tomatoes.
- Scoop out pulp, leaving shells intact.
- Dice tomato tops and pulp.
- Drain.
- Combine all ingredients except tomato shells, avocado, olives and lettuce.
- Mix well.
- Spoon mix into shells.
- Serve on lettuce garnished with avocado wedges and ripe olives, if you like.
- Makes 4 servings.
