Chicken Stuffed Tomatoes Recipe

  1. Saute/fry chicken in butter till tender, about 5 min.
  2. Cut thin slices from top of tomatoes.
  3. Scoop out pulp, leaving shells intact.
  4. Dice tomato tops and pulp.
  5. Drain.
  6. Combine all ingredients except tomato shells, avocado, olives and lettuce.
  7. Mix well.
  8. Spoon mix into shells.
  9. Serve on lettuce garnished with avocado wedges and ripe olives, if you like.
  10. Makes 4 servings.
