Apple-Parsnip Mash

  1. In a medium saucepan, combine parsnips, apples, and the water.
  2. Cover and bring to a boil over medium-high heat.
  3. Reduce heat to medium, and cook until parsnips are completely tender, 25 to 30 minutes.
  4. Transfer mixture to a food processor, add butter, and process until smooth.
  5. Season with salt and pepper.
  6. Reheat in pan over medium if necessary before serving.
