LEMON CAKE - Glazed
- 1 box Lemon Cake Mix
- 4 oz box of "cook &serve" lemon pudding
- 3 Eggs
- 1/2 cup vegetable oil
- 1 1/2 cup water
- 2 cup powdered sugar
- 1 tbsp corn syrup (optional)
- 1/3 cup warm lemon juice
- Preheat oven to 350F.
- In large mixing bowl, add box of cake mix, pudding mix, eggs, oil, and then water.
- Mix well with mixer to add volume.
- Pour cake batter into 9"x13" pan and bake according to instructions on box.
- (approximately 30 minutes @ 350 degrees)
- Make glaze while cake bakes.
- Mix 2 Cups powdered sugar,1 Tablespoon corn syrup, and 1/3 cup warm lemon juice using a wire whip until glossy.
- When cake is done, cool for 5 minutes before inserting fork multiple times into the top of cake.
- Pour glaze over the top of warm cake and spread evenly over cake.
- Let cool, cut, and serve as is or with a bit of whipped cream on top.
