Fire Roasted Zoodles

  1. Shred zucchini in VEGGETTI on thick setting.
  2. Add to pot of boiling water and blanch for 3-4 minutes.
  3. Drain well.
  4. Heat oil in large saute pan and add garlic and zucchini.
  5. Saute for 3 minutes on medium heat and add tomatoes, seasoning and salt and pepper.
  6. Cook on low to medium heat for 10-12 minutes stirring regularly.
  7. Serve with shredded parm.
