Maple-Glazed Stuffed Roast Pork

  1. Heat oven to 350F.
  2. Melt butter in large skillet on medium heat.
  3. Add apples; cook and stir 3 min.
  4. or until tender.
  5. Remove from heat.
  6. Prepare stuffing mix as directed on package.
  7. Stir in apple mixture.
  8. Press stuffing mixture onto cut-side of meat to within 1/2 inch of edges.
  9. Roll up, jelly-roll fashion, starting at one short end.
  10. Tie closed with butchers' twine.
  11. Spread onions onto bottom of small roasting pan sprayed with cooking spray; top with meat.
  12. Mix syrup, mustard and rosemary; spoon over meat.
  13. Bake 1 hour 5 min.
  14. to 1 hour 15 min.
  15. or until meat is done (145F).
  16. Remove from oven.
  17. Let stand 15 min.
  18. before slicing to serve.
