Banana Layer Cake (Low Calorie)
- 1 tablespoon all-purpose flour
- 1 14 cups Splenda sugar substitute
- 14 cup sugar
- 13 cup vegetable shortening
- 1 teaspoon vanilla extract
- 3 egg whites
- 2 cups all-purpose flour
- 34 teaspoon baking soda
- 12 teaspoon salt
- 2 bananas (1 cups worth mashed)
- 12 cup low-fat buttermilk
- 2 bananas (sliced)
- 14 cup unsalted butter (chilled USE LOW FAT KIND)
- 1 teaspoon grated lemon rind
- 1 teaspoon vanilla extract
- 8 ounces fat free cream cheese
- 3 cups sifted powdered sugar
- oven 350 degrees
- spray two 9 inch cooking cake pans with cooking spray don't spray the sides and line bottom with wax paper, coat wax paper with cooking spray and sprinkle the 1 tablespoon of flour.
- beat sugar shortening vanilla at med speed for 5 minutes.
- add egg whites one at a time beat well after each.
- combine 2 cups flour, baking soda and salt with a whisk.
- combine banana and buttermilk.
- add flour mixture to sugar mixture alternately with buttermilk mixture, beginning and ending with flour mixture.
- pour batter into the pans
- tap once to remove air bubbles
- bake for 30 minutes
- place one layer on plate and spread the frosting arrange bananas
- place other layer on top and cover with frosting
- chill for one hour.
- FROSTING:.
- beat first 4 ingredients at high speed for 2 minutes or until smooth don't overbeat.
- gradually add in powdered sugar and beat at low speed until blended.
