Sooz's Rich and Smoky Chili Con Carne

  1. Heat oil in Dutch oven.
  2. Sprinkle beef with, salt and pepper and brown in oil.
  3. Add onions and garlic and cook until onions are tender.
  4. Add beef broth, beer, coffee, crushed tomatoes, tomato paste and blend well.
  5. Stir in chili powder, cumin, coriander, brown sugar, cocoa powder, cayenne pepper, and paprika.
  6. Mix in the chopped green chilies and anaheim pepper.
  7. Bring to a boil, reduce heat, cover and simmer for at least 2 hours stirring occasionally to make sure it does not stick to the bottom of the pan.
  8. Add beans if desired and simmer for an additional 30 minutes.
  9. Serve hot with onions, shredded cheese, and sour cream on top and with flour tortillas for scooping and dipping.
