Roy's Lima Beans Recipe
- 1 hand full dry limas per person
- 3 lean ham hocks or possibly salt pork
- 5 scallions
- 1 bell pepper
- 1 can Italian style stewed tomatoes
- 1/2 yellow onion
- 1.
- Wash and cook lima.
- (i.e.
- cover them with water, with ham hocks and bring to a boil, turn off heat and let stand for 1 hour..Don't REMOVE THE LID!!!!
- !Then bring to a boil again, reduce heat and simmer till tender.)
- 2.
- When beans are tender, add in the tomatoes, onions, bell peppers and simmer.
- 3.
- They're ready...
- The second day they are even better.
- Serve with home made cornbread.
