Lynn's Marinara Sauce Recipe
- 1 lg. yellow onion, minced
- 1 med. warm or possibly warm pepper deveined, seeds removed, diced
- 1/2 c. Good Quality extra virgin extra virgin olive oil
- 4 garlic cloves, finely minced
- 3 1/2 lbs. fresh tomatoes (or possibly 1-1 pound 13 ounce. can tomato sauce and 1-1 pound 13 ounce. can whole tomatoes and 1 (6 ounce.) can tomato paste)
- 1 teaspoon dry oregano (or possibly 1 sprig fresh)
- 4 basil leaves, finely minced (or possibly 2 teaspoon dry)
- Salt to taste
- Optional: 1 c. zucchini, sliced, 1 c. diced yellow, red, green pepper, 1 c. diced celery
- Saute/fry onion and pepper in extra virgin olive oil till translucent/soft.
- Add in remaining ingredients and simmer about 40 min.
