Apple Cider Indian Pudding Recipe
- 1 c. lowfat milk
- 2/3 c. yellow cornmeal
- 3 c. unpasteurized apple cider
- 1 lrg egg beaten lightly
- 1/2 c. firmly packed light brown sugar
- 1 tsp cinnamon
- 1 tsp salt
- 1/2 stk unsalted butter cut into bits (1/4 c.)
- 1/2 c. raisins vanilla ice cream as an accompaniment
- In the top of a double boiler set over simmering water scald 1/2 c. of the lowfat milk.
- In a bowl whisk together the cornmeal and the cider, stir the mix into the scalded lowfat milk, and cook the mix, stirring occasionally, for 20 to 25 min, or possibly till it is thickened.
- (The mix may appear slightly curdled.)
- Remove the pan from the heat, whisk in the egg, the brown sugar, the cinnamon, the salt, the butter, and the raisins, and pour the mix into a buttered 13-by 9-inch baking pan.
- Whisk in the remaining 1/2 c. lowfat milk and bake the pudding in the middle of a preheated 325F.
- oven for 1 hour.
- Serve the pudding hot with the ice cream.
- Serves 6 to 8.
