Lemon Poppy Muffins
- 13 cup milk
- 14 cup oil
- 1 (6 ounce) container lemon low fat yogurt
- 1 egg
- 1 34 cups flour
- 14 cup sugar
- 2 tablespoons poppy seeds
- 1 tablespoon grated lemon, rind of
- 2 12 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 12 cup confectioners' sugar
- 3 teaspoons lemon juice
- Heat oven to 400.
- Grease bottoms only of 12 regular size muffin cups, or place paper baking cups in muffin cups.
- Beat milk, oil, yogurt and egg in large bowl.
- Stir in remaining ingredients.
- Bake 12-15 minutes.
- Top with lemon glaze while warm.
