Spinach Stuffed Artichokes
- 1 cup shredded cheddar cheese
- 1/2 cup italian bread crumbs
- 2 tbsp dried oregano
- 15 cherry tomatoes, thin sliced
- 2 tsp minced garlic
- 1 lb fresh, chopped baby spinach
- 1/2 onion, fine chopped
- 2 tbsp olive oil, divided
- 4 artichoke bottoms, rinsed n drained (precooked or marinated works great)
- 1/2 tbsp water
- 1.
- In a skillet heat 1 tbl.
- olive oil add onion, saute 5 minutes, or until translucent and soft.
- Stir in spinach, water and garlic, and cook 3~5 minutes, or until most of liquid has evaporated.
- Remove from heat.
- stir in cheddar cheese.
- Season with salt and pepper.
- Cool 10 minutes, or until easy to handle.
