Spinach Stuffed Artichokes

  2. In a skillet heat 1 tbl.
  3. olive oil add onion, saute 5 minutes, or until translucent and soft.
  4. Stir in spinach, water and garlic, and cook 3~5 minutes, or until most of liquid has evaporated.
  5. Remove from heat.
  6. stir in cheddar cheese.
  7. Season with salt and pepper.
  8. Cool 10 minutes, or until easy to handle.
