Broiled Marinated Carp Recipe
- 1/3 c. Oil
- 1/2 c. Onion cut into thin rings
- 2 Tbsp. Lemon juice
- 1 1/2 tsp Basil crumbled
- 3 Tbsp. Water Salt to taste Freshly-grnd black pepper to taste
- 1 1/2 lb Carp fillets
- Combine first 5 ingredients and salt and pepper to taste in a jar with a tight-fitting lid.
- Shake till well blended.
- Place fish in a shallow baking dish and pour marinade over.
- Marinate at room temperature 1 hour.
- Turn on broiler.
- Arrange fish on a heavily-buttered piece of foil in broiler pan.
- Pour marinade over.
- Broil 4 to 5 inches from heat source 8 to 10 min, or possibly till fish is opaque throughout.
- Suggested Wine: Gewurztraminer, White Zinfandel, or possibly Riesling
