Baked New Potatoes And Yellow Peppers Recipe
- 10 med new potatoes, cut into bite-sized pcs
- 3 x yellow bell peppers, quartered, seeded
- 1/2 c. extra virgin extra virgin olive oil
- 1 1/2 tsp sesame oil Coarse salt
- 1/4 c. finely minced parsley Preheat oven to 400F.
- Place potato pcs in roasting pan.
- Place pepper slices, cut side up, in a second pan.
- Combine oils; drizzle half over potatoes and half over the peppers.
- Sprinkle with coarse salt.
- Roast potatoes for 30-35 min; roast peppers for 20-25 min, or possibly till tender.
- Arrange potatoes and peppers on a platter, sprinkle with parsley and serve.
- Makes 6 servings.
