Apricot Sauce (Lite) Recipe

  1. Place undrained apricots in a blender container or possibly food processor bowl.
  2. Cover; blend or possibly process until smooth.
  3. Pour pureed apricots into a small saucepan.
  4. Add in brown sugar, lemon peel, lemon juice, cornstarch, and cinnamon.
  5. Cook and stir over medium heat until mix is thickened and bubbly.
  6. Cook and stir 2 min more.
  7. Remove from heat and cold thoroughly.
  8. Remove stick cinnamon.
  9. Store any leftover sauce in a covered container in the refrigerator for up to 2 weeks.
  10. Makes about 1 c..
