Rustic Dried Cherry Salad
- 3 cups French bread, cubed
- 14 cup pecans, chopped (or walnuts)
- 12 cup dried cherries, chopped
- 1 stalk celery, trimmed and diced
- 3 tablespoons canola oil
- 3 tablespoons raspberry vinegar
- 1 tablespoon honey
- 2 tablespoons water
- 14 teaspoon curry powder
- Preheat oven to 350 degrees.
- Spread bread cubes on baking sheet; bake 15 minutes or until toasted.
- Cook completely.
- Set aside.
- Toast pecans in a medium skillet over medium heat 3 minutes, stirring frequently.
- Combine pecans, cherries, celery and bread in a large bowl.
- Combine oil, vinegar, honey, water and curry powder in a cup.
- Stir well.
- Pour over salad and toss.
- Serve immediately.
