Coconut Ice Cream

• 50 grams dessicated coconut
• 200 ml coconut milk
• 175 ml condensed milk
• 175 ml double cream
• 1 tbsp ground almonds
• 1 tsp vanilla extract

1. Place all ingredients in a bowl and beat with a balloon whisk for 2-3mins.
2. Pour into a freezer friendly container and place in freezer until set.
3. Check every two hours where possible, stiring with a fork to break down water crystals.
