Crispy Coleslaw Recipe
- 1 sm. head cabbage, shredded, about 1 1/2 pound
- 1/2 green pepper, minced
- 1/2 red pepper, minced
- 1 med. onion, minced
- 1 c. sugar
- 1/2 c. plus 2 tbsp. vinegar
- 1/2 c. vegetable oil
- 1 teaspoon salt
- 1 teaspoon celery seeds
- Combine cabbage, peppers, onion and sugar in a large bowl.
- Stir well.
- Cover and refrigerate2 hrs.
- Combine remaining ingredients in a saucepan; bring to a boil, stirring till salt dissolved.
- Pour over cabbage mix, toss gently.
- Cover and refrigerateat least 2 hrs before serving.
- Will keep several days in the refrigerator.
- Yield 6-8 servings.
