Brunswick Stew (Soup) Recipe
- 1 Tbsp. Bacon fat
- 1 lrg Onion, sliced
- 1 x Chicken, cut in half
- 1 lb Beef stew meat, in bite-size
- 1 Tbsp. Flour
- 1 lb Baked ham (leftover)
- 8 c. Cool water
- 1 Tbsp. Salt Fresh grnd black pepper
- 1/2 tsp Dry thyme
- 1/4 tsp Red pepper flakes
- 1 lrg Canned tomatoes
- 2 med Potatoes, diced
- 1 c. Frzn corn kernels
- 1 c. Frzn lima beans
- 1 c. Frzn okra, sliced
- 1 c. Frzn green beans
- 1/4 c. Fresh parsley, minced
- In a large heavykettle, heat bacon fat and add in onions.
- Saute/fry till lightly browned.
- Dust beef with 1 Tbsp.
- of flour, add in to kettle along with chicken and brown.
- Add in the ham, cool water, salt, black and red pepper, and thyme.
- Bring to boil then reduce heat and simmer for 2 hrs covered, or possibly till meat is tender.
- Remove meats from stock and strain stock.
- Skim any excess fat from stock, and return to kettle.
- Remove chicken from bones, throw away skin and cut into bite size pcs.
- Return meats to kettle adding all other ingredients except for okra, beans and parsley.
- Bring to boil and simmer, covered, for 45 min.
- Add in okra and beans and cook for 15 min longer.
- Garnish with fresh parsley.
