Deviled Eggs with Curry

  1. Cut hard-boiled eggs lengthwise in half.
  2. Scoop yolks into medium bowl.
  3. Mash yolks with fork.
  4. Add mayonnaise, minced green onion and curry powder; mix well.
  5. Season yolk mixture to taste with salt and pepper.
  6. Divide filling among egg halves, mounding slightly.
  7. Arrange eggs on platter.
  8. Sprinkle with minced parsley.
  9. (Can be prepared 8 hours ahead.
  10. Cover and refrigerate.)
  11. Garnish eggs with Nicois olives, if desired, and serve.
