Weight Watchers Red, White, and Berry Pizza (2 Points)
- 34 cup part-skim ricotta cheese
- 1 teaspoon grated lemon zest
- 14 teaspoon black pepper
- 3 medium whole wheat tortillas
- 2 ounces cooked lean ham, in strips
- 1 cup fresh blueberries
- Spray a grill rack with nonstick spray; preheat the grill to medium.
- Combine ricotta cheese, lemon zest, and pepper.
- Place tortillas on the grill rack and grill until the bottoms are crisp, 1-2 minutes.
- Flip with tongs.
- Spread the cheese mixture evenly on the tortillas, sprinkle evenly with ham and blueberries.
- Grill, covered, until the bottoms are crisp, about 2 minutes.
- Cut each tortilla into quarters.
