Tilapia Ceviche
- 4 Large Ripe Red Tomatoes
- 1/2 Chopped Red onion
- 1 cup Chopped Cilantro
- 1/2 Large Diced Cucumber
- 6 Limes
- 2 1/2 lbs of Salt
- 1 Pepper
- Dice Tilapia into small cubes and place them in a large shallow dish.
- Add 1 cup of fresh squeezed lime juice to tilapia and chill for at least 45 minutes.
- (Lime juice cooks the fish, and you will know its fully cooked when it turns white.)
- In a separate bowl, place chopped red onion and chopped cilantro.
- Cut out sides of tomato leaving core in tact.
- (You do not want any seeds or juice.)
- Add to bowl of onions and cilantro.
- Peel, seed and dice the cucumber.
- Add to bowl of onions, cilantro, and tomatoes.
- Chill until fish is ready.
- Drain all lime juice from tilapia.
- Carefully mix drained tilapia into bowl of onions, cilantro, tomatoes, and cucumber.
- Salt and pepper to taste.
