Easy Minestrone Packed with Vegetables
- 2 Tomatoes
- 2 large leaves Cabbage
- 1/2 Carrot
- 1 Onion
- 1 Potato
- 80 grams Bacon
- 2 Soup stock cubes
- 2 tsp Ketchup
- 1 Salt and pepper
- 2 cup Water
- Dice the vegetables and bacon into 1 cm pieces.
- Saute the bacon and onion until the onion is cooked through.
- Add the other vegetables, and saute until the tomato falls apart.
- Add the water, soup cubes, salt, pepper and ketchup.
- Simmer until the vegetables are well cooked and it's done.
- It's even better if you make it the day before you plan to eat it.
