Easy Minestrone Packed with Vegetables

  1. Dice the vegetables and bacon into 1 cm pieces.
  2. Saute the bacon and onion until the onion is cooked through.
  3. Add the other vegetables, and saute until the tomato falls apart.
  4. Add the water, soup cubes, salt, pepper and ketchup.
  5. Simmer until the vegetables are well cooked and it's done.
  6. It's even better if you make it the day before you plan to eat it.
