No-Bake Peanut Butter Cookies
- 2 c. sugar
- 1/4 c. cocoa
- 1/2 c. butter or margarine
- 1/2 c. milk
- 1/2 tsp. vanilla extract
- 1/2 c. creamy or crunchy peanut butter
- 3 c. uncooked quick-cooking oats
- 12 cherries, quartered (optional)
- 1/3 c. chocolate chip morsels (optional)
- Combine first 5 ingredients in a medium saucepan. Cook over low heat until butter melts, stirring occasionally. Increase heat to medium; bring to a boil. Boil for 1 minute. Now is the time you would quickly add cherries and chocolate morsels. Stir until chocolate melts. Remove from heat; quickly stir in peanut butter until smooth. Stir in oats; quickly drop by heaping tablespoonfuls onto wax paper. Let cool completely. Carefully remove from wax paper. Store in airtight container. Yield: 2 1/2 to 3 dozen cookies.
