Turkey Chili
- 2 Tablespoons Olive Or Vegetable Oil
- 1 whole Medium Onion, Diced
- 1 whole Jalapeno Pepper, Seeded And Diced
- 1 pound Ground Turkey
- 1 can Petitie Diced Cut Tomatoes (14.5 Ounce Can) Undrained
- 1 can (15 Oz. Size) Tomato Sauce
- 1 teaspoon Minced Canned Chipotle Pepper In Adobo Sauce
- 2 Tablespoons Chili Spice Mix
- 1 teaspoon Salt
- 1 can Light Red Kidney Beans ( 15.5 Ounce Can) Rinsed And Drained
- 1/2 cups Sour Cream
- 1 Tablespoon Fresh Squeezed Lime Juice
- 1 cup Monterey Jack Cheese, Shredded
- For the chili: Add oil to a Dutch oven, on medium high heat.
- Once oil is hot add onion and jalapeno and saute until tender, about 3 minutes.
- Add ground turkey and continue to saute until turkey is browned.
- Add diced tomatoes, tomato sauce, chipotle pepper, chili spice mix, salt and drained kidney beans.
- Stir, cover and simmer on low heat for 1 hour.
- For the lime sour cream: In a small bowl, combine 1/2 cup sour cream with 1 tablespoon of fresh squeezed lime juice.
- Mix well and set aside in refrigerator.
- To serve, top each bowl of chili with a handful of shredded cheese and a dollop of lime sour cream.
