Grilled Cheese With Bacon and Thousand Island Dressing

  1. Cook the bacon in a large nonstick skillet over medium heat until crisp, about 8 minutes.
  2. Remove and drain on a paper towel-lined plate.
  3. Wipe out the skillet.
  4. Heat the butter in the skillet over medium heat.
  5. Add 2 bread slices.
  6. Top each with one-quarter of the cheese and 2 strips bacon.
  7. Spread 2 bread slices with some of the dressing and press them on top of the sandwiches, dressing-side down.
  8. Cook until the cheese melts and the bread is golden, 3 to 4 minutes per side.
  9. Repeat to make 2 more sandwiches, adding more butter as needed.
