Bite Size Quiche Recipe
- 3 Large eggs
- 1 pound cottage cheese
- 3 tbsp. lowfat sour cream
- 1 c. shredded cheddar cheese
- 1/2 c. Bisquick
- 1/4 teaspoon salt
- 1/4 c. melted butter
- 1 can minced green chilies (I use half this amount)
- Approximately 1 c. cooked sausage
- Combine all ingredients well.
- Fill well-greased mini-muffin tins 2/3 full.
- Bake in a preheated 375 degree oven for 20 min.
- Serve at room temperature.
- These freeze well.
- Yield: 48-54 quiches.
- I like to use half cheddar cheese and half Mozzarella cheese.
