Rissy's Beer Cheese Soup

  1. Melt butter in dutch oven or soup pot.
  2. Add onion and saute' until clear.
  3. Add salt, pepper, and worchestershire.
  4. Add flour gradually constantly stirring.
  5. Add chicken broth.
  6. Whisk until smooth.
  7. Add milk and cheese.
  8. Stir continually until cheese is melted.
  9. Pour in beer.
  10. If not flat stir, stir, stir.
  11. Heat through.
  12. Serve piping hot.
  13. (Generally, the darker the beer, the more bitter the soup).
