Rita's Oriental / Asian Chicken Salad
- 2 (3 ounce) packages ramen noodles, crushed, discard seasoning packet
- 1 cup sunflower seeds
- 1 cup slivered almonds
- 3 tablespoons sesame seeds
- 1 teaspoon sesame oil
- 1 head bok choy, chiffonade
- 1 bunch green onion, chopped
- 1 cup carrot, slivered
- 2 cups snow pea pods or 2 cups snap peas
- 1 whole chicken, deboned, diced in 1-inch pieces
- 2 (15 ounce) cans mandarin oranges, drained
- 12 cup vegetable oil
- 12 cup rice vinegar
- 2 tablespoons soy sauce
- 12 cup white sugar
- 2 tablespoons sesame oil
- 1 teaspoon chili oil
- Mix ramen noodles,sunflower seeds, seame seeds, and almonds in a zip lock bag.
- Toast over med-low heat in 1 T sesame oil.
- Stir frequently to prevent burning.
- Remove from heat and allow to cool.
- In a large bowl combine veggies, fruit, chicken and ramen noodle mixture.
- Whisk dressing and toss with salad just prior to serving.
