Balsamic Red Onions with Glazed Green Beans
- 1 tablespoon canola oil
- 1 3/4 pounds red onion 2 large or 3 medium, cut into 16 wedges each
- 1 pound green beans freshly trimmed
- 3/4 cup stock vegetable, low-salt
- 1 1/2 tablespoons balsamic vinegar
- 2 teaspoons brown sugar, light
- 1/4 teaspoon salt
- 1 x black pepper freshly ground to taste
- Heat oil in a large skillet over medium heat.
- Add onions and cook, stirring occasionally, until golden, about 15 minutes.
- Meanwhile, bring a large saucepan of lightly salted water to a boil.
- Add green beans and cook, uncovered, until crisp and tender, about 7 minutes.
- Drain.
- Add vegetable broth to the onions; cook for 8 to 10 minutes.
- Stir in balsamic vinegar, brown sugar, salt and pepper.
- Add the beans, cover and cook for 4 to 6 minutes.
- Serve.
