Savory Tri Tip

  1. Combine all spices, except garlic cloves, in a small bowl.
  2. After mixed rub on all sides of the roast.
  3. Cover or place in ziplock bag.
  4. Refrigerate for at least 3 hours.
  5. Remove and let stand for 30 minutes before cooking.
  6. Place mustard, vinegar, oil, garlic, and lemon juice in a blender.
  7. Blend until mixed well.
  8. Prepare charcoal or gas grill.
  9. Place roast on grill and brush with oil, vinegar mixture.
  10. Place over direct heat for first 5 minutes, turn and repeat basting and cook time.
  11. After both sides are browned move off of direct heat or lower coal bed.
  12. Turn every 5 to 7 minutes basting with each turn.
  13. Monitor with thermometer for desired welness.
  14. After reaching desired temp place over direct heat for 2 minutes on each side.
  15. Remove from heat and let rest for 15 minutes before slicing.
