Sweet Potato Souffle (Casserole)
- 3 cups sweet potatoes (baked, peeled and mashed)
- 1 cup sugar
- 12 teaspoon salt
- 2 eggs, beaten
- 14 cup margarine
- 12 cup sweetened condensed milk
- 12 teaspoon vanilla
- 14 teaspoon cinnamon
- 14 teaspoon nutmeg
- 1 teaspoon butter flavoring
- 1 teaspoon sherry flavoring
- 13 cup margarine, melted
- 1 cup light brown sugar
- 1 cup pecans, chopped
- 12 cup flour
- Place mashed potatoes in a bowl.
- Beat eggs and add to potatoes.
- Add the sugar, salt, 1/3 stick margarine, sweetened condensed milk, vanilla, cinnamon, nutmeg, butter & sherry flavorings and beat on low speed until well blended and combined.
- Pour into buttered baking dish.
- For topping:.
- Mix remaining ingredients together except margarine.
- Pour the topping over potatoes, then pour the melted margarine over the topping.
- Bake 40 minutes in preheated 350 degree oven.
