Chocolate Fudge Pecan Pie
- 3 oz. unsweetened chocolate
- 3 Tbsp. butter
- 4 large eggs
- 1 3/4 c. sugar
- pinch of salt
- 1 tsp. fresh lemon juice
- 1 c. broken pecans
- 1 (9-inch) unbaked pie shell, pricked with fork
- 1 c. heavy cream, whipped to firm peaks
- In the top of a double boiler set over simmering water, melt together the chocolate and butter.
- In a bowl, beat the eggs until frothy.
- Gradually add the sugar, salt and lemon juice.
- Slowly add the chocolate mixture until thoroughly blended.
- Stir in the pecans.
- Pour the mixture into the unbaked pie shell.
- Bake in a preheated 350u0b0 oven until the pie is flaky, about 35 minutes.
- Do not chill.
- Cool pie completely and serve with the whipped cream. Makes 8 servings.
