Corn Salad
- 2 -11 ounces canned corn niblets
- 4 tablespoons mayonnaise
- 1 (1 lb) bag cheddar cheese (shredded)
- 4 fresh jalapeno peppers (chopped)
- 1 (16 ounce) bag Fritos corn chips (crushed)
- In med.
- bowl mix corn, cheese, peppers, and mayo.
- Cover and chill.
- Add chips and extra mayo if needed and serve.
- Needs to be moist not dry.
