Country Green Beans and Onions

  1. String and snap fresh beans.
  2. Skip this step if using frozen.
  3. Quarter and slice the onion.
  4. Melt the bacon grease in a large, heavy skillet.
  5. I prefer a cast-iron chicken fryer.
  6. Saute the onions over medium to medium-high heat until soft and just begining to brown.
  7. Add the beans and saute until cooked enough to suit your personal taste.
  8. I prefer them barely done.
  9. Sprinkle with fresh-ground black pepper.
