Balsamic Asparagus

  1. Sweat onions in a large saute pan.
  2. Add a tiny pinch of salt.
  3. After 2 minutes add asparagus and continue to sweat.
  4. Add oil if needed.
  5. Season.
  6. When asparagus is 90% cooked add vinegar and sugar.
  7. Toss.
  8. Reduce til nearly dry.
  9. Toss with feta.
  10. Variations; Minced garlic, red wine, parmesean, goat cheese, shallots, dijon, basil, red peppers, parsley,

yellow onion, balsamic vinegar, feta cheese crumbles, white pepper, garlic, sugar, kosher salt, olive oil
