Balsamic Asparagus
- 1 bundle asparagus; trimmed & halved
- 1 yellow onion; large dice
- 3/4 cup balsamic vinegar
- 1/2 cup feta cheese crumbles
- 1 tsp white pepper
- 1 tsp garlic powder
- 1 large pinch sugar
- 1 kosher salt; to taste
- 1 olive oil; as needed
- Sweat onions in a large saute pan.
- Add a tiny pinch of salt.
- After 2 minutes add asparagus and continue to sweat.
- Add oil if needed.
- Season.
- When asparagus is 90% cooked add vinegar and sugar.
- Toss.
- Reduce til nearly dry.
- Toss with feta.
- Variations; Minced garlic, red wine, parmesean, goat cheese, shallots, dijon, basil, red peppers, parsley,
yellow onion, balsamic vinegar, feta cheese crumbles, white pepper, garlic, sugar, kosher salt, olive oil
