Herbed Chicken

  1. Season flour with salt and pepper and place in large plastic bag or pie dish.
  2. Place chicken in bag and coat well with flour (or dredge in pie dish, shaking off excess).
  3. Heat butter and oil in large skillet over medium heat.
  4. Add shallots and chicken and cook until brown (15-20 minutes).
  5. Stir in next 4 ingredients (tomatoes- sugar) and additonal pepper, if desired.
  6. Reduce heat, cover and simmer for 20-30 minutes.
  7. Stir in chives, dill and parsley and continue cooking (uncovered) for 5 minutes.
