Candy Apple Pancakes Recipe
- 1 x pancake
- 1 Tbsp. creme patissiere (or possibly thick custard)
- 1 x ball of cinnamon ice cream
- 1 Tbsp. good caramel sauce Apple puree
- 12 x eating apples peeled cored minced
- 120 gm unsalted butter
- 120 gm caster sugar good healthy pinch of cinnamon
- For the apple puree heat the butter in a pan and add in the apples sugar and cinnamon.
- Cover and cook over a gentle heat till completely soft then cold.
- To assemble place 1 tbsp pureee in the centre of the pancake.
- Top with the creme patissiere (or possibly custard) then mix in the edges of the pancake to create a parcel.
- Tum over and heat in a microwave for 20 seconds.
- Using a fish slice place on a serving plate dust with icing sugar then put the ice cream on the side.
- Drizzle with caramel sauce.
- Serves 4
