Angel's Apricot Chicken

  1. Combine oil and butter in a non-stick pan.
  2. Cook diced chicken, in batches, until browned.
  3. Remove chicken and add Asafoetida powder.
  4. Stir 5 seconds.
  5. Add onions and garlic.
  6. Cook until transparent, do not brown.
  7. Add chicken to onions in pan, stir to combine.
  8. Combine French onion soup mix and apricot nectar.
  9. Pour over chicken.
  10. Stir until bubbling.
  11. Lower heat and cook until chicken is no longer pink, stirring occasionally.
  12. Rice: Cook Basmati rice in the boiling water with the Vegeta stock powder and lemon juice.
  13. To serve: Place a ring of rice on serving plate.
  14. Fill centre with Apricot chicken.
  15. Garnish with lemon slices.
