Honey Cinnamon Candied Yams Recipe
- 6 lg. yams
- 1 1/2 tbsp. cornstarch
- 2 tbsp. cool water
- 1 1/2 c. honey
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 1/2 teaspoon grated lemon rind
- 2 teaspoon lemon juice
- 1/4 c. orange juice
- 1 teaspoon salt
- 6 tbsp. butter
- Grease a large ovenproof casserole.
- Set aside.
- Scrub yams.
- Cook in boiling salted water till tender.
- Drain.
- Rinse in cool water.
- Peel and cut in half lengthwise.
- Place in casserole.
- Dissolve cornstarch in cool water.
- Combine honey, cinnamon, nutmeg, lemon rind, lemon juice, orange juice, and salt in a saucepan.
- Bring to a boil.
- Add in cornstarch and thicken, stirring constantly.
- Remove from heat.
- Add in butter.
- Pour mix over yams.
- Bake for 15 min in preheated 375 degree oven.
