Green & White Chicken Pinwheels Recipe
- 4 ounce. chicken breast, boned, skinned & pounded to 1/2 original thickness
- 1 c. cooked spinach, well liquid removed & minced
- 2 teaspoon lemon juice
- Dash of each onion pwdr, allspice & cinnamon
- 1/2 teaspoon dry mint
- Pepper to taste
- 2 teaspoon lemon juice & paprika to coat the chicken before baking
- Mix the spinach, 2 tsp.
- lemon juice, onion pwdr, allspice, cinnamon, mint and pepper.
- Spread mix over entire surface of the pounded chicken breast.
- Roll "jelly roll" fashion.
- Secure with toothpick.
- Sprinkle entire surface of chicken roll with lemon juice and paprika.
- Wrap in foil tightly and bake in preheated 350 degree oven for 30 min.
- Serve cool.
- At serving time, slice chicken into pinwheels and arrange attractively on plate.
- May be served warm, but doesn't slice as attractively.
