Roasted Turkey Breast with Carolina Barbecue Sauce

  1. Place turkey in parchment-lined full-sheet pans (or in lined half-sheet pan for trial recipe).
  2. Season with salt and black pepper.
  3. Bake in 375 degrees F-convection oven 30 min.
  4. Meanwhile, mix barbecue sauce, vinegar, mustards and crushed red pepper.
  5. Prepare Whipped Sweet Potatoes with Streusel Topping.
  6. Spread each turkey breast with 1/3 cup barbecue sauce mixture; continue baking 6 min.
  7. or until done (165 degrees F).
  8. Let stand 10 min.
  9. Meanwhile, heat remaining barbecue sauce mixture.
  10. Slice turkey.
  11. For each serving: Spoon 3/4 cup Whipped Sweet Potatoes with Streusel Topping onto plate; top with 5 oz.
  12. turkey.
  13. Serve 3 Tbsp.
